    alaskan birch syrup varies from area to area, and can be light in colour and viscosity, like maple, or dark and very thick. not as sweet as maple.
    takes longer, also, to produce the syrup from the sap. where it is 10:1 for maple, it’s more like 80:1 or 100:1.

    the sap of the birch tree can be consumed for its high vitamin and mineral content. while it runs clear, we drink it. when it starts to turn milky, it loses the nutritional content and the taste goes bitter.
